From what I've read about other users' experiences playing Neoquest, it seems that once you have 7 spirit potions, it becomes extremely difficult to get the three remaining ones (as if they weren't hard to get already :P). When I played I couldn't get more than 7 just like you.
 7 spirit potions is more than enough to beat the final boss in my opinion. I've seen people beat Insane mode without using a single Spirit Potion. Although if I  were in Insane I'd try to make a little extra effort to get 10 just in case.

Thanks for the advice. I am on Evil mode and am equipped with Moonstone staff and Inferno robe.
 
I assumed the two bosses were back to back with no time to do anything. The guide I use said they were straight after each other. 
 
I'll keep collecting potions for the final battles!

Are you on Evil mode?
If so,  you have to fight two portions of the of the final boss. 
you should also have your moonstone staff because it will help you along to take a little extra damage away from the enemy hitting you. These fights are not back to back I don't think, You have a chance to heal up in between fights or go hunt for more potions. (no more exp though if you are max level) ;(
When I did Evil mode, I had all 10 spirit and superior potions and only a few other lower potions. I felt lazy and didn't hunt for more potions between fights. I still beat them both but I was on my last spirit and superior potions. I would say to go hunt for more spirit potions on the last boss room. I know its annoying but you don't want to die. 
Also, just to be sure, between fights you could hunt for more if you used most of the spirit and superior potions.

I'm just wondering whether 6 spirit healing potions are enough to tackle the final two bosses? I also hold the max limit of all lower potions. Will this be enough or do I need to try and collect all 10 spirit potions?

Kudos to you for trying insane mode at all, I'm pretty sure I (eventually) completed it on the normal mode, but I know I gave up at Faerieland for a rather long time <.< >.>

Do you mean the Space Faerie? The Battle Faerie is not an opponent in the Battledome.
 
The "Battle Faerie" avatar is randomly awarded when you win a battle against any opponent (although it may not show on the winning page, it will appear on you avatar list). You may need to check you list of avatars to see if you have this avatar.
 
If you mean the Space Faerie. She becomes a challenger when you redeem a code from Neopets merchandise.
