Berry Bash - increasing my score?

Okay, so basically as it stands, I'm getting every single customer to their seat, served and cleaned up whilst before their 5 hearts drop to 4. Yet, my own high score is sitting at 4,198 whilst I can see there is a high score of 23,864! How exactly is this possible?

 

Is this a simple manner of choosing who to serve and who not to serve, and if so how on earth do you go about doing this without initiating a game over from too many unhappy customers?

 

I initially thought this game was a simple matter of serving people quickly, but is there some manner of strategy involved that's not covered in the game guide? :) Any info on this would be appreciated!
