i cleared a previous quest that was quite expensive as well just to get a new one haha

and I got 1 shot K.O.   So far its taken me 4 days to get him down to 82 HP with throw pillows. However, I have some HT equipment I've been using  so its doing a bit more damage. Tomorrow will be my last day of battle. Just keep at it with throw pillows. Its pretty annoying having to wait out the week but its better than having to constantly start over. 

That's way much stronger than mine... Guess I will just have to give that a miss 

Finally reached the last boss. Still trying to level up to 50 to learn Pillow but is there an easier way to defeat her (on Easy level) with my current stats?

Yep, in the dailies here, scroll way down to the 5th tier of dailies, called "other neopets stuff to do".  You will see "island training" and "pirate training".  You can do either one.  Island training uses codestones and is faster, while pirate training uses dubloons and takes a bit longer.  You CANNOT train at both at the same time.  However you CAN train at the school while simultaneously using a faerie fortune cookie to train too.  They are 100NC and you get 1 faerie quest per day for 9 days.  Which ever faerie quest you get, your stat will USUALLY increase by 3 points.  If you get lucky and get the battle faerie or the faerie queen, multiple stats increase!

Thank you for the advice but how do I level up? I vaguely remember a training school with codestones as payment. Is that it?

I have not been battling for a very long time. These are what i currently equipped. Fought a few times and absolutely no chance of winning. I am pretty sure I am not doing it correctly.

Any help / advice will be greatly appreciated!
